Mexican Omelet

This will open your eyes in the morning! It's one of my favorites-I enjoy breathing fire.


  • 1 tablespoon butter
  • 2 eggs, beaten
  • 2 ounces jalapeno Jack cheese, shredded or sliced
  • 2 tablespoons salsa
  • Hot sauce (optional)


Make your omelet according to Dana's Easy Omelet Method (Klik Omelets 101), placing the filling over half of your omelet when you get to step 6. Cover, turn the burner to low, and cook until the cheese is melted (3 to 4 minutes). Follow the directions to finish making the omelet. Top with salsa and hot sauce (if using).

Yield: 1 serving, with 5 grams of carbohydrates and 1 gram of fiber, for a total of 4 grams of usable carbs and 25 grams of protein.
